From a recent trip to Baton Rouge, I used a BR crawfish sausage, delish! Turn the oven to 400F/200C. Bake for 25-30 minutes or until potatoes are cooked all the way through, stirring the pan halfway through. Used a onion sliced in 1/8ths and it was great. Delicious. Wash and cut your potatoes into bite size chunks. Preheat oven to 350 and line a baking sheet with aluminum foil. Place potatoes, corn, shrimp and sausage in a single layer onto the prepared baking sheet. Put the baking sheet in the oven and let it get hot. Its a lifesaver for a busy weeknight.
